Cauliflower and Potato Curry | Nepali Food Recipe

Party style Cauliflower and Potato Curry. Not an everyday recipe but good for any parties or get together!

Ingredients

  • 1 medium cauliflower
  • 2 potatoes
  • 1 green bell pepper
  • 1 red onion
  • 2 Tomatoes
  • 2 green chili
  • 1/2 cup chopped cilantro or green onion
  • 1/2 cup tomato puree
  • 1 tsp. cumin seeds
  • 1 tsp. turmeric powder
  • 2 tsp. veg curry masala
  • 2 tsp. garlic ginger paste
  • 1 tsp. paprika powder
  • 2 tsp. salt
  • 1 tsp. red chili powder
  • 1/2 tsp. black pepper
  • 1 tbsp. soy sauce
  • ½ hot water
  • Canola oil for frying

Directions

  1. Deep fry cauliflower for about 5 minutes and potatoes for about 7 minutes.
  2. Fry onions and peppers for about 3 minutes.
  3. In a pan, add oil and fry cumin seeds, green chili.
  4. Sauté chopped tomatoes and add turmeric powder, vegetable curry masala, garlic ginger paste, tomato puree, salt, paprika powder, red chili powder, black pepper and mix it all together.
  5. Add hot water and cook the gravy for another minute.
  6. Add cauliflower and potatoes into the gravy and mix it very well.
  7. Cook for about 4-5 minutes.
  8. Garnish with cilantro and serve.
