Dahi papdi Chat is a popular street food in Nepal and India. It is commonly eaten as an appetizer as well.
Ingredients
FOR PAPDI- 1 cup wheat flour
- 1/3 cup semolina flour
- 1 tsp ajwain
- 1/2 tsp salt
- 4 TBSP ghee
- 120ml water
- 10-12 papdi
- 1 small boiled and cut potato
- 1/2 finely diced red onion
- 1/3 cup tamrind/dates sauce
- 1/4 cup pudina sauce
- 1 cup plain yogurt
- 1/3 cup Nylon Sev
- pinch of black salt, chaat masala, & cumin powder
Directions
TO MAKE PAPDI- Combine wheat flour, semolina, ajwain, salt, and ghee together.
- Slowly add water and make a dough and cover for 30 minutes.
- Then make 3 equal parts of the dough and using a rolling pin roll out to make a thin sheet. Remember, more thinner the better.
- Now use a fork and poke holes all over the sheet. Reason to poke holes is to prevent it from puffing.
- Now using a round cookie cutter or any medium sized round bottle cap, cut the sheets and take the cut part out in a plate.
- Now heat oil in a flat pan in low-medium heat. Remember the oil temperature should not be high.
- Now drop the round cut sheets into the oil and fry.
- You should fry this for about 5-7 minutes flipping multiple times. If the temperature is high, the sheets will get fried fast and will get soggy after it cools down.
- The goal is to fry them in low heat and making it light brown in 5-7 minutes.
- Once the papdis are ready, let it cool down.
- Place about 10 papdis in a plate.
- Then top it with potato and onion.
- Now spread couple of spoon of pudina & tamdrind chutney.
- Then add whisked Yogurt.
- Now sprinkle pinch of black salt, chaat masala, & cumin powder.
- At last top it off with Nylon Sev all over.
