Samay Baji | Nepali Food Recipe | Anup Kitchen

Samay Baji is a traditional Newari food platter prepared and eaten during festival seasons like Dashain and Jatras. It consists of varieties of side dishes eaten with chiura (beaten rice).

Ingredients

Bhuti (Black eyed peas curry)

  • 300 gms (1 cup) dried black-eyed peas (after soaking in water becomes one large bowl)
  • 1 tsp turmeric powder
  • 1 tsp salt
  • 1 tsp cumin powder
  • 1 tsp red chili powder
  • 2-3 tbsp olive oil (Mustard oil better)
   

Bhatmaas or Musya (Brown or black soybean)

  • 300 gms (1 cup) brown/black soybean seeds
  • 1 tsp salt
  • 1 tsp cumin powder
  • 1 tsp red chili powder
  • 2 cloves of garlic thinly sliced
  • 1 inch of ginger sliced
  • 2 tbsp olive oil (Mustard oil better)
 

Wuaucha or Saag (American Spinach)

  • 2 bunch of Spinach
  • 1 tsp salt
  • 1 tsp red chili powder
  • 1 tsp cumin powder

Khen (Fried boiled eggs)

  • 1 egg per serving
  • 1 tsp olive oil
  • 1/3 tsp turmeric powder
  • pinch of salt and cumin powder
 

Directions

Bhuti (Black eyed peas)

  1. Soak black-eyed peas overnight and boil.
  2. Heat a pan and add oil and turmeric powder.
  3. Add boiled black-eyed peas and sauté.
  4. Add cumin powder, salt, red chili powder and mix

Bhatmass (Black Soybean)

  1. Toast Bhatmaas in oil until shell pops out.
  2. Put in a bowl and add sliced garlic and ginger, salt, cumin powder, red chili powder and oil.
  3. Mix well and serve

Saag (American Spinach)

  1. Boil spinach for 10 minutes.
  2. Squeeze out water and put in bowl.
  3. Add oil, salt, red chili powder, cumin powder and mix.

Khen (Fried Boiled eggs)

  1. Boil eggs.
  2. Heat a pan and add oil and turmeric powder
  3. Peel and Fry eggs and sprinkle salt and cumin powder.
